Every town in the area has its own food speciality and a recipe to discover by visiting its wine cellars, oil mills, restaurants and farmhouses with exquisite ones such as chickpeas “panissa” and “trofie with pesto”. In all ligurian dishes, PDO (Protected Designations of Origin) extra-virgin olive oil has its home and its aroma makes “Genoese focaccia” unique and fragrant. PDO basil is the key ingredient of pesto. 14 are the products presided over by Slowfood.
